Sesame Cucumber Salad
Ingredients:
2 cucumbers (medium sized)
1 tsp. of salt
2 Tbsp. seasoned rice vinegar
1/2 tsp. red chili flakes
2 Tbsp. dark sesame oil
Directions:
Peel the cucumbers and cut them into lengthwise quarters. (Remove seeds if bitter)
Cut the cucumbers crosswise, into 1/2-inch thick pieces.
In a bowl, place cucumbers and sprinkle with salt. Toss with sesame oil, seasoned rice vinegar, and chili flakes.
Salads are good for you and your family since green veggies contain lots of vitamins. Veggie-based soups are also good for you. Kids must also learn to eat vegetables and fruits since they need lots of vitamins and minerals that can aid in their growth and development. Here’s a simple recipe that is veggie-based.
Broccoli Soup
Ingredients:
3 tbsp. butter
1/2 small onion (finely chopped)
3 garlic cloves (minced)
1 pc. bay leaf
6 cups broccoli, cut into pieces
4 cups broth (vegetable)
1/4 tsp. freshly ground pepper
2 cups whole milk
1/2 cup plain yogurt
1/2 cup freshly grated parmesan or crumbled Feta cheese
1 tsp. salt
Directions:
In a stockpot, melt butter over low heat. Add onion, garlic and bay leaf. Saute until onions are translucent or caramelized.
Add broccoli, stock, salt and pepper.
Cook for 15 minutes over medium heat.
Remove soup from heat and remove bay leaf.
Puree the soup along with the milk in batches and into a blender.
Return soup to the pot and heat gently (low heat).
Top with cheese, serve hot and enjoy.

Spicy Pork Tenderloins
2 whole pork tenderloins (about 1 lb each)
1 tsp of salt
1 tsp cumin (ground)
1 tsp coriander (ground)
1/2 tsp cinnamon (ground)
1/2 tsp ginger (ground)
3 tbsp flour (all-purpose)
Prepare charcoal fire or preheat gas grill for covered direct grilling over medium heat.
Meanwhile, cut pork tenderloin pieces lengthwise almost in half, being careful not to cut all the way through. Open and spread flat. Place tenderloin between 2 sheets of plastic wrap; with meat mallet or rolling pin, pound to 1/4-inch thickness. Cut tenderloin into 4 pieces.
On a piece of waxed paper, combine and mix flour, salt, cumin, coriander, cinnamon, and ground ginger. Add pork to spice mixture and turn to coat evenly.
Place pork on grill. Cover grill and cook pork for about 5 to 6 minutes or until lightly browned on both sides or until pork loses its pink color throughout. Turn pork over once.
Mango Salsa
Ingredients:
2 medium mangos (ripe), peeled and coarsely chopped
2 medium kiwifruit, peeled and coarsely chopped
2 tbsp seasoned rice vinegar
1 tbsp fresh ginger grated and peeled
1 tbsp minced fresh cilantro minced
Mango Salsa Preparation: In medium bowl, combine mangoes, kiwifruit, vinegar, fresh ginger, and cilantro.
If not serving right away, cover and refrigerate up to 4 hours.
Pass Mango Salsa to spoon over pork to serve.
